Sun Dried Tomato Hummus
2 15 oz cans garbanzo beans rinsed and drained
1 jar (7oz) oil packed sun dried tomatoes undrained
2/3 cup water
3 tbsp olive oil
1 tsp red pepper flakes
1/2 tsp sea salt
1/4 tsp pepper
Chopped fresh basil optional
baked pita chips or vegies
In food processor, combine beans, tomatoes, water, oil, garlic, pepper flakes, salt and pepper cover and process until blended sprinkle with basil if desired.
Tahini Hummus
14 oz canned chickpeas (garbonzo beans), drained and rinsed
1 garlic clove crushed to paste with 1/4 tsp sea salt
3-4 tbsp tahini (ground sesame seed into a paste)
2-4 tbsp fresh squeezed lemon juice
1/4 tsp ground cumin
extra virgin olive oil or water
salt
paprika and chopped fresh flat leaf parsley to garnish
Put chickpeas into food processor add the garlic and process to a thick course paste. Add 3 tbsp tahini and process again until blended. Add 2 tbsp of lemon juice, cumin, and salt to taste and process until creamy. Taste and add extra tahini or lemon juice if desired. Drizzle in oil or water unilt you reach desired consistency.
Egg free spiced pancakes
1 cup whole wheat flour
2 tbsp of brown sugar (or I substitute Agave nector or Stevia --natural sweeteners) to taste
2.5 tsp baking powder
1/2 tsp pumpkin pie spice
1/4 tsp sea salt
1 cup fat free milk
2 tbsp canola oil (I use safflower sometimes too)
maple syrup optional
Mix flour sugar, powder, spice and salt. combine milk and oil and stir into dry ingredients. Cook batter and turn when bubbles form on top.
Good morning Granola (great on yogurt or just add milk for cereal, do away with processed refined cereals and eat homeade instead!)
4 cups old fashioned oats
1/2 wheat germ
1/2 cup sliced almonds (or other nut of choice)
2 tsp ground cinnamon (can experiment with other seasonings)
1/8 tsp sea salt
1/2 cup orange juice (all natural or fresh squeezed)
1/2 cup honey (I also substitute agave nectar sometimes)
2 tsp canola oil (I substitute all natural applesauce- check the label--for oil)
1 tsp vanilla
2 cup dried fruit of choice (cherries, blueberries, banana, cranberries etc)
I also add flax seed to this recipe
Combine first 5 ingredients in large bowl (and flax). In small saucepan combine juice, honey and oil. Bring to a boil stirring constantly. Remove from heat. Stir in vanilla. Pour over oat mixture and mix well. Bake in a 15X10X1 baking dish coated with olive oil cooking spray. bake at 350 for 20-25 min stirring every 10 min. Cool on wire rack then stir in dried fruits. Store in air tight container.
Banana blueberry pancakes
1 1/2 cups of whole wheat flour
2 tbsp sugar( I substitute agave nectar or Stevia)
2 tsp baking powder
(I also add flaxseed and wheat germ to the recipe for nutritional value)
1/2 tsp sea salt
1 egg, lightly beaten
1 1/4 cup fat free milk
3 medium ripe bananas mashed (I also use applesauce as a substitute to bananas, to desired consistency)
1 tsp vanilla
1 1/2 cups frozen or fresh blueberries
maple syrup optional
In bowl mix flours, sugar, powder, salt and flax or wheat germ. Combine egg milk banana or applesauce and vanilla and stir into dry ingredients. Pur batter onto griddle sprayed with olive oil spray and sprinkle with blueberries. (sometimes I add mine to the batter and cook within the pancake).
