Tonight was the first official day of spring. So many people were playing and sunbathing in the park I thought we were back in Germany! So we did the official American thing to celebrate, we barbecued!
I had an idea for a relish I wanted to try so here is the recipe. It was delicious and I don't want to forget it. Of course, I didn't measure anything so you'll have to just try it on your own.
1 red onion, chopped
coconut oil
red pepper jelly
red wine
apple cider vinegar
craisins (or dried cherries)
rosemary (fresh or dried)
Saute onion in oil until soft. Add jelly and saute 10 min or until onion browns a little. Add some red wine and apple cider vinegar (could also use red wine vinegar if you have it). Also add craisins or dried cherries and rosemary to mixture. Stir while bringing to a boil. Simmer covered for 10 min then let it cool before serving it over pork. YUM!
