I buy tons of organic apples and the stuff in the news lately about organic apple farmers injecting their apples with antibiotics is enough to make me scream. It is a complete and absolute shame that I pay $6 for a bag of organic apples and they are still being tampered with, but until I have my own orchard, it will have to do.
Despite that, I found this recipe (from the Eat Clean Cook Book) for organic applesauce with no added sugar. If you buy organic applesauce, you know it's outrageously expensive as well and usually has little flavor. This recipe was quick and easy and painless and does NOT require baking!
4-6 medium apples, unpeeled, washed, and quartered. (I left the core because it's one less step and I just blend it all up in a puree at the end anyways.)
1 tsp ground cinnamon
1/4 tsp nutmeg
2 Tbsp fresh lemon juice
Place all ingredients inside a ziplock bag. Toss well to distribute evenly. Place in freezer overnight or for at least 4 hours. Remove from freezer and allow to thaw for an hour or more. You can gently rub the skin from the thawed apple and mash with a fork or potato masher. Or in my case I dropped the peeling step and just blended the whole apple with my food processor. No sugar needed! It tasted delicious and had way more flavor than anything I would have paid $5 or more for at the store!
