Homemade Broth Recipes, Easier than Pie

Crock Pot Chicken Stock

-Buy a whole free range organic chicken from a farmer (or Costco)
-Cook the chicken and enjoy but save the innards and bones for the broth. If not making right away I freeze them in a ziplock bag.
-Over the weeks save the ends of your vegetables, herbs, peels of potatoes and carrots, and anything else yummy for the broth. I put it all in a ziplock bag over several weeks and it's frozen and ready to add. No waste!
-Place the chicken carcass and any stray bones in the crock pot with the innards. Add the leftover veggie scraps, herbs, and garlic you have on hand.
-Cover the bones and veggies with cold filtered water. Cold allows the flavor and nutrients to be fully extracted from the bones. Add optional sea salt (I use pink himalayan sea salt) and ground pepper. For added flavor, nutrients, and color you could put in a few dashes of turmeric.
-Add 1-2 tbsp of apple cider vinegar (I use Braggs or organic) and allow it to sit for an hour. This allows the minerals to be extracted from the bones.
-Turn the slow cooker to low and allow to simmer overnight. Usually 18-24 hours.
-Once it's cooled a bit, strain chicken stock using a colander, sieve or cheesecloth.
-Store in recycled jars or ziplock freezer bags in the freezer. Trick to freezing in glass jars: only fill 3/4 full and freeze with the lid off. Add the lid after frozen.
-Use in soups, stews, sauces, and for cooking grains.

Veggie Broth

-Use organic veggies when possible and save the scraps, clippings, and peels throughout the week(s). Put in a ziplock freezer bag in your freezer.
-On the stovetop or in a crock pot throw in your frozen veggie clips, garlic, herbs, and cold filtered water.
-Add sea salt and pepper if you'd like.
-Bring water to a boil on stovetop then simmer covered for an hour or longer. If in a crock simmer for an entire afternoon or so.
-Let it cool. Then strain with a colander or sieve. I use a heavy spatula and push on the veggies in a sieve so that it gets out every last drop the veggies soaked up.
-Store just like I listed above.
