Gluten Free Bread Recipe by Julia Haase
Makes 2 loaves
900g flour mix (any mix of grains you'd like to use)
50g flax seed meal
50g psyllium husk powder
2 tsp salt
2 Tbsp honey or maple syrup
2 packages of yeast
1000g warm water (115-125*)
110g grapeseed or olive oil
Mix together dry ingredients. Add wet ingredients together, then slowly blend until it forms a ball in the mixer. Shape into desired form, and allow to rise for about an hour. If putting in a bread paan, line it with parchment paper. Bake at 400* for 45 min until internal temperature reaches 190*. Free form loaves may take less time.
If you want to let the bread rise for a long time or overnight, significantly reduce the amount of yeast (overnight: use about half a packet for 2 loaves).
Making the bread in cup measurements (these are estimates based on the approximate weight of each item using a kitchen scale):
3.5 cups oat flour
3 cups brown rice flour
4 Tbsp psyllium husk powder
4 Tbsp flax seed meal
2 tsp salt
2 Tbsp honey or maple syrup
2 packages of yeast
1/2 cup oil
1000 ml warm water
Follow directions above.
Another Gluten free bread recipe:
3/4 amaranth flour (millet flour is cheaper)
3/4 brown rice flour (Bob Mills on Amazon)
1/2 gluten-free oat flour (Bob Mills on Amazon)
1/2 cup potato starch
1/4 amaranth grain (whole hulled millet which looks the same, but is a lot cheaper)
2 tbsp ground flaxseed
1 tbsp xantham gum (can substitute with psyllium husk)
2 tsp instant yeast
1 1/2 tsp salt
Wet ingredients:
1 cup water
1/4 vegetable oil (any oil, I even used olive oil)
1/4 liquid honey
2 tsp apple cider vinegar
2 whole eggs + 2 egg whites lightly beaten (can substitute each egg with 1 tbsp chia seed or ground flax meal with 3 tbsp of water to form a yokey consistency)
Add
wet ingredients to the bread maker, then add dry ingredients on top.
Gluten-free bread should be baked on quick cycle; The top never comes out brown, so, I put the loaf right out of the
bread machine into the oven for 15 min. (preheated to 350 degrees - I
take it out of the pan and put on the baking sheet). I would not
recommend leaving the bread in the bread machine after it's done, it is
better to take it out immediately. I have a 2 lbs bread machine, and the
loaf is pretty big. Most exotic ingredients can be bought at amazon.com or vitacost.com (I just pick whatever is cheaper).
Homemade Chocolate by Julia Haase
5 Tbsp coconut oil
5 Tbsp cocoa powder or cacao powder
5 Tbsp shredded coconut (optional)
5 Tbsp almond butter (optional)
nuts of choice (optional)
pinch of sea salt
honey to taste (several tbsps)
small amount of vanilla
Gently heat everything over very low heat stirring together ingredients. Pour into mold/ muffin tin cups. (might come out easier if you use parchment paper). Let cool in fridge or freezer. Keep chilled, will melt at room temperature.
