Pina Coladas Anyone?

Some days I'd rather be at the beach with a good book then in my own kitchen surounded by mess after mess calling my name. So what did I find today but a popciscle recipe that took me away! Yep! One sip and my mind escaped to the warm white sands, crashing sound of the waves, me in a flowing dress and sun hat wavering in the ocean breeze, completely relaxed type of mindset.  I have to share especially if you like Pina Coladas!

Ingredients

  • 1can light coconut milk
  • 1 can pineapple chunks, in their own juice (I used frozen pineapple)
  • 1 large banana
  • 1 tsp vanilla extract

Instructions

  1. Blend all ingredients together in a blender, until smooth.
  2. Pour into popsicle molds, and freeze.

I did not have coconut milk at the time so I used a mix of coconut water and almond milk and added shredded coconut to the recipe. Add your favorite liquor (tequila, rum, vodka) and freeze and boom you have a mama Popsicle fit for a day at the beach OR a Popsicle that's great for helping the kids get a little shut eye just when you need it most. Just kidding! But the thought did cross my mind!
